When I began to change the way I was eating, a friend introduced me to coconut milk. I enjoyed adding it to a smoothie and used it occasionally. Since following the Whole30 approach to eating I realize what a crucial component coconut milk is to my diet. Coconut milk is great because it is full of fat. What??? Yes, I said it was full of fat in reference to that being a good thing. Fat is important because it keeps me feeling full. I need that because I do not snack during the day. I add coconut milk to my tea every morning before I head out to work. It makes for a VERY creamy and satisfying beverage.
It is important to note that not all coconut milk is that same. I prefer full fat coconut milk. It is often found in cans. The problem with most of the varieties in the cans is that the fat separates. It also ends up in globs when I add it to my tea. Often you will find coconut milk in the refrigerated section of the store but those varieties are generally not full fat and often contain some sort of yucky additives.
The absolute best coconut milk I have found it AROY-D. It is not separated, it pours smoothly every time and it is 100% coconut milk! The only bad news is that it is hard to find. I have only seen it once in an organic market. However, it can be found on Amazon. There is an organic option as well. Give it a try and I think you will fall in love.
