Stuffed Chicken Proscuitto

When it comes to cooking healthy this has to be one of the easiest, most satisfying dishes I have come up with!  Even better, it follows the Whole30 guidelines

Ingredients

  • 4 chicken breasts
  • 8 slices prosciutto
  • sun dried tomatoes (I like the ones packed in oilive oil)

For Non-Whole30ers

  • shredded mozzarella
  • sun dried tomato pesto

 

Directions

  1. Preheat oven to 350 degrees.
  2. Cut a small slice in the side of each chicken breast to make a pocket.  Fill the pocket with sun dried tomatoes.  (Or sun dried tomato pesto and mozzarella for Non-Whole30ers)
  3. Wrap the chicken breast in prosciutto and place it in a baking dish.
  4. Bake for 30 to 4o minutes, until the chicken is cooked through.  This will vary depending on your oven and the size of the chicken breasts.
  5. Remove from the oven and let is sit for a few minutes before serving.
  6. Enjoy!

*The liquid that remains in the baking dish has great flavor.  I like to pour it over veggies.  In an upcoming post I will write about my roasted cauliflower and brussel sprouts.  They are the perfect combination  for a complete and totally satisfying meal!
