When it comes to cooking healthy this has to be one of the easiest, most satisfying dishes I have come up with! Even better, it follows the Whole30 guidelines
Ingredients
- 4 chicken breasts
- 8 slices prosciutto
- sun dried tomatoes (I like the ones packed in oilive oil)
For Non-Whole30ers
- shredded mozzarella
- sun dried tomato pesto
Directions
- Preheat oven to 350 degrees.
- Cut a small slice in the side of each chicken breast to make a pocket. Fill the pocket with sun dried tomatoes. (Or sun dried tomato pesto and mozzarella for Non-Whole30ers)
- Wrap the chicken breast in prosciutto and place it in a baking dish.
- Bake for 30 to 4o minutes, until the chicken is cooked through. This will vary depending on your oven and the size of the chicken breasts.
- Remove from the oven and let is sit for a few minutes before serving.
- Enjoy!
*The liquid that remains in the baking dish has great flavor. I like to pour it over veggies. In an upcoming post I will write about my roasted cauliflower and brussel sprouts. They are the perfect combination for a complete and totally satisfying meal!
