A platter of healthy goodness!

I like these treats because they are low in sugar and yummy too. Chocolate is the only item with added sugar. They are simple to make and the perfect little treat at the end of the day!

- Prosciutto Wrapped Dates- I like to make a batch of these and store them in the fridge for a simple treat. They are best warm so I suggest re-heating them before eating. Many recipes for this will have you use a whole date for each pecan. I prefer to slice the dates into 6 to 8 pieces. By doing this you are cutting down on the sugar. Here are my simple directions…
- Lay out your proscuitto.
- On the edge of each proscuitto (about 1 inch in) add your goat cheese. I use about 1 teaspoon.
- Top the cheese with the date slice and 1 pecan.
- Roll the prosciutto up and place it on a foil lined baking sheet.
- Bake at 350 degrees for a about 5 minutes or until the cheese starts to bubble. You can also broil them.
- Coconut Manna (coconut butter) is pureed coconut. It is a “superfood.” It is low in sugar and high in fiber. It is also high in fat so it will keep you feeling full. It can be found at health food stores or organic markets. You can also buy it on Amazon or other health food websites.
- Tip-It is difficult to work with when it is cold and the fat will separate. If it is cold when I get a new jar, I heat it by letting it sit in warm water. I then open it and give it a good stir. This seems to help distribute the fat before it solidifies again.
- When making the apple slices with manna, spoon a small amount into a microwave safe bowl and heat it for about ten seconds. Once it is warm, give it a stir and top with cinnamon. Cut up your apples and enjoy the manna as a dip.
- *I prefer green apples because they are the lowest in sugar.
- Dark Chocolate…I don’t mean Hershey’s Special Dark!!! I aim for 70% cocoa or more. It took me awhile to get used to chocolate this dark, it is very bitter! Chocolate is one of the few things that I eat with added sugar. I justify it because of the benefits that go along with chocolate.A 100 gram bar of dark chocolate with 70-85% cocoa contains : (I only eat a small square!)
- 11 grams of fiber.

- 89% of the RDA for Copper.
- 98% of the RDA for Manganese.
- It also has plenty of potassium, phosphorus, zinc and selenium.
